Lemon and poppy seeds plum cake

Poppy seed and lemon plum cake is a classic dessert; perfect for brunch or breakfast is fresh and light and good with a glass of milk or a cup of tea. Here is what you need to make a delicious plum cake

180g all purpose flour

50g corn or potato starch

130g of butter

120g of sugar

3 eggs

25g of baking powder

poppy seeds, about 2 table spoons

the zest of 3 lemons and the juice of 2 of them

Grate the zest off the 3 lemons and squeeze two of them making sure the seeds are eliminated

Mix the sugar with the butter till you obtain a soft mix, then add the eggs one by one. Do not add the second until the first is completely mixed with the rest. Add the sifted flowers and mix until well amalgamated. Add the lemon juice and the zest and mix it all together. Then add the poppy seeds. Add the baking powder at the end and mix it all together

IMG_0094Butter and flower a plum cake baking pan and pour the mix in it.

IMG_0098Bake for about 35 – 40 min at 180C (375F) according to the type of oven you have, and voila’! Perfect poppy seeds and lemon plum cake is served!
