Pollo marinato grigliato (Grilled marinated chicken)


Chicken is one of my favorite poultry and I love cooking it. Many think that cooking chicken, especially chicken breast, is easy. However, if you cook it one min longer, it dries up and and the taste change completely. I like a perfectly cooked juicy tender chicken an the time changes according to how big the piece is and the surface you cook it on. Today, I marinated and grilled chicken breast. Marinating any type of meat, from fish to poultry to beef is an easy way to flavor it without going crazy on the tools you need.                       Here is my recipe for a simple yummy marinated chicken:

Chicken breast (preferably organic)

Fresh sage leaves

Fresh ginger root

Fresh garlic

Thyme powder (fresh thyme are better, but I did not have it)

Black pepper  powder  and salt

Extra virgin olive oil


IMG_0356Cut the chicken breast in pieces of equal size so they will have the same cooking time. Place them into a bowl and add a piece of ginger root you have previously peeled and cut, the garlic, the thyme powder, the salt, the pepper, and the olive oil. The quantities are totally up to you. If you like more one flavor then the other, add one, or more than one, ingredient to the recipe. With a spoon or with your hands (I love touching the food when I cook) mix the chicken and the spices all together. Cover the bowl with aluminum foil and leave in the fridge for at least one hour. You can leave it for more, the longer, the tastier! Some people may like to place the chicken in a small plastic bag (like a sandwich bag). Yo can do it, I actually usually use a little bag, but I did not have any today.

After it has marinated the desired time, take it out of the fridge and leave it outside for about 15 – 20 min so the meat will not be cold once you put it on the grill. The muscles of the breast will relax and allow it to cook better. Heat a grilling pan and once hot place the pieces of chicken on it.  While the chicken cooks, you can prepare some fresh veggies. I chose tomatoes that I dressed only with extra virgin olive oil, a pinch of salt and pepper. The chicken will be very tasty itself, you do not want to match a heavy side.
