The cheesecake is one of the American most known desserts in the world. You can really find hundreds of varieties wherever you go. The cheesecake is usually a thick cake made with cheese, fruit, syrups that differs from state to state, and often is covered by a frosting. Although some are very yummy and deserve to be tried at least once, I personally find it quite heavy. So, I decided to give you a personalized version of this delicious dessert. Here is what you need:
500g of ricotta cheese, pick the one you prefer
3 eggs, room temperature
1 orange, better if organic
100g of icing sugar, or regular sugar or honey if you prefer
30g of all purpose flour
milk, if the mix is too thick
The butter and the cookies are for the base of the cake. According to how thick you want it to be, pick the amount of butter and cookies. Finely crumble the cookies, melt the butter in a pan and once cool, add it to the crumbs making sure they are well combined, then form the cake base in the baking pan. Press well with the help of a spoon to make sure that you have a solid base that will not break when you will cut it. Leave in the fridge for at least 30 minutes. Preheat the oven at 180C (375F).
Wash the orange and grate the zest in a cup. With the help of a fork or spoon, mix the ricotta cheese to the sugar. Then add one egg at the time and make sure it is well combined before adding the second one. Add the flour with the help of a sift, and the orange zest. Add some milk if the mix is too thick. Option: instead of adding the whole eggs, you can add only the egg yolks at the beginning and whip the whites with a pinch of salt, and add them at the end to make the mix softer. Remember to add them with a spoon with movements from the bottom to the top till well combined so they will not lose the air.
Take the base out of the fridge and pour the ricotta mix on it. Level if necessary. Bake for about 45 minutes. And, voila’! The cheesecake is ready! Quick, easy, and delicious!
