I think banana is one of the most versatile fruit. It’s great for baked goods, smoothies, parfait, or fruit salads. One of the advantages of using bananas in the kitchen, is that they are already incredibly sweet, especially when ripe, therefore you don’t need much added sugar (sometimes you don’t need it at all). Here I want to share with you my Banana Nut Muffin recipe.
– 3 cups all purpose flour (385g)
– 2 large eggs
– 10 Tbsp unsalted butter, melted and cooled (140g)
– 1 1/2 cup plain non fat yogurt (380g)
– 1 cup granulated sugar (200g)
– 1 1/2 cup finely diced banana (2 medium bananas)
– 3/4 cup chopped walnut (100g)
– 1 tsp baking powder
– 1/2 tsp baking soda
– 1 tsp ground cinnamon
– 1/2 tsp ground nutmeg
– 1/2 tsp salt
Turn on the oven to 375F (180C). In a large bowl mix the following: flour, baking powder and baking soda, salt, cinnamon and nutmeg; mix it all together and sit it aside.
In another bowl place the melted and cooled butter and the sugar; with the help of a whisk, beat it until soft and fluffy. If you have a KitcheAid, place on medium (4) and beat it for a few minutes. Add one egg at the time making sure that you add the second once the first is well blended. Without stopping the whisk, add half of the flour mix you set aside before and then half the yogurt. Now you can add the rest of the flour mix and the remaining yogurt. Lastly, add the bananas and the walnut. Continue mix until everything is blended.
Place muffin cups in the muffin pan and fill 3/4 of each with the batter and bake until golden brown (15 – 20 min depending on the oven).
You will notice that with this ingredient combination, the muffins will have an incredibly round top and will be very moist.
Remove the muffins from the muffin pan otherwise they will continue to receive heat and will likely become drier. Let them cool on a cookie rack and serve when still warm.
