Biscotti al Cardamomo e te’ Matcha

This week a dear colleague will be leaving the institution we both work for. She will be traveling to Michigan for a few days with her husband and they will have plenty of hours to kill in the car. She also happen to love cookies. She never finishes her meal without some sweet treats and, during, the time I got to know her, I realized that cookies are her absolute favorite. We will be having a party at work in a few days and my present will be a box with different type of cookies.

I found this cardamom and Matcha tea recipe on a magazine a while ago and this was the perfect chance to try it. The cookies turned out delicious, so I will be making them again for my colleague’s special box. Here is what you need.

Ingredients – makes about 15/20 cookies 

– 2 cups all purpose flour (300g)

– 3/4 cup granulated sugar (130g)

– 2/3 cup coconut oil (140g)

– 2 large eggs

– 2 tea spoon baking powder

– a pinch of salt

– 1/2 tea spoon organic vanilla extract or 1 vanilla bean

– 1/4 tea spoon ground cardamom

– 1/4 tea spoon organic almond extract

– 2 Table spoons + 1 tea spoon Matcha tea (25g)

– 2 Table spoons cold water (to melt the Matcha)

– Confectioner sugar as needed

Procedure

Preheat the oven at 350F (180C). Combine the sugar, the egg and the coconut oil in a mixer and blend till smooth. Add the salt, the cardamom, the almond and the vanilla extracts. Melt the Matcha with some water. Add half the flour and, once well mixed, add the Matcha then combine the rest of the flour. Place the mix in a large bowl and place it in the fridge for about 30 min. The dough will have to result hard enough for you to be able to make little balls that don’t stick to your hands. Roll the dough balls in the confectioner sugar and place them on parchment paper. Bake for about 20 min on the middle rack on the oven. Let the cookies cool completely before enjoying them.

These make a perfect treat to enjoy with milk or simply have if you are craving something sweet.

The cookies are supposed to stay soft inside. Make sure you don’t over cook them.
